Watermelon Granita
(Yields 6 cups)
Need something refreshing on a hot summer's day? Try this simple 5 ingredient recipe and impress your friends and family! Salud! Ingredients: 1/2 medium to large seedless watermelon (approximately 6 cups), rind removed, cut into 2" pieces 1/4 cup fresh lime juice 1/4 cup light brown sugar 1/4 tsp Himalayan salt 1/4 tsp cayenne pepper Key lime slices for garnish- Prepare the watermelon by slicing it, removing the rind and chopping it into 2" pieces.
- Puree watermelon, fresh lime juice, light brown sugar, Himalayan salt and 1/4 tsp cayenne pepper (or set the cayenne pepper aside and use a sprinkling of it for a garnish).
- Pour mixture through a sieve to remove the solids.
- Pour the sieved mixture into a 13" x 9" glass baking dish and cover.
- Freeze until the edges begin to set (approximately 30-35 minutes).
- Use a fork to scrape and break up the frozen edges.
- Continue to break up the frozen parts, until the mixture resembles fluffy shaved ice (approximately 2-4 hours).
- Once frozen, fluff with a fork and serve in glass bowls or cups. Garnish with a slice of key lime or 1/4 slice from a regular sized lime.
Sweet Advice
*Can be made one week ahead. Cover and keep frozen. Scrape to fluff before serving!
**If the granita is too frozen and difficult to scrape then leave out to warm for 5 minutes before fluffing and serving.
